Behind the Barrel: Worlds Collide APA

We’ve had a blast with this beer collaboration! When we sat down with our old friends at Catawba Brewing, both their Founder, Billy Pyatt, and their Head Brewer, Dave Cobb, asked us what style of beer we wanted to brew. With our interest in more sessionable styles, and thinking about Catawba's line-up, this is where the fun began — and our worlds collided. Ultimately, we landed on an APA — one of the first styles that helped the craft revolution get back on track in the 1980s and became a staple in the 1990s. So we set out to come up with the recipe, Catawba procured the ingredients and before long we were in their Charlotte Brew House…

About Worlds Collide

Here’s a break down of our ingredients that are staples to this American Pale Ale:

The Malts: Two Row gives the fermentable sugars, the Carapils gives some head retention and dextrin type qualities, and the Crystal 40 provides just a touch of color.

The Hops: Cascade is THE quintessential hops for a classic American Pale Ale and one of our all-time favorite hop varieties. It gives a little bit of a fruity and grapefruit type citrus character. Centennial has been called "Cascade on steroids" giving the same characteristics.

The Yeast: There is nothing better than the old "Chico" strain that has its origins in a very famous Pale Ale from a very famous brewery in Chico, California.

Lastly, Catawba suggested that we ferment it in one of their open top fermenters. This was a first for us, and a super memorable collab brew! We hope you enjoy. Cheers!
